Tzatziki Sauce



A cucumber garlic yogurt dip.


2 small cucumbers
white pepper
1 1/4 cups plain yogurt
2 tbsp. olive oil
1 tbsp. lemon juice
3 garlic cloves minced
1/4 cup fresh mint leaves shredded (or 2 tbsp. dried)


Peel, seed, and dice cucumbers. Sprinkle with salt and set aside. Combine yogurt, olive oil, lemon juice, and garlic in a large bowl. Cover and refrigerate. Just prior to serving, beat yogurt sauce til smooth, then mix in cucumber and mint. Salt and white pepper to taste. Serve with gyros and/or baked pita bread wedges.
