Spanakorizo (Spinach Rice)



A quick and fun spinach rice dish.


3 tbsp. olive oil
1 medium onion, chopped
1 clove garlic, crushed
3 boxes frozen spinach
2 16 oz. cans stewed tomatoes
1 8 oz. can tomato sauce
2 8 oz. cans water
2 tbsp. ketchup
1 cup rice
juice of 1/2 lemon


Saute olive oil, onion and garlic til crystallized. Stir in all ingredients (except rice and lemon juice) until it comes to a boil. Add rice, lemon juice, return to boil, then lower heat and cook covered for 20 minutes. Stir occasionally. Serve with Greek bread.
