A hearty, vegetarian meal in itself!
1 bag dried lentils, cleaned and rinsed
1/3 cup olive oil
2 tbsp. oregano
2 cans stewed tomatoes with 2 cans water
2 sm. cans tomato sauce with 4 cans water
1/3 cup ketchup
medium onion, chopped
1/2 cup chopped mint, or 2 tbsp. dried mint
dash of salt
OPTIONAL: garlic clove crushed, sliced carrots, potatoes, celery
Clean lentils for stones or debris. Wash in colander and drain. Heat olive oil, onion, oregano, mint over medium heat, covered. Simmer until onions are transparent. If vegetable slices are used, add them at this time.
Add lentils, tomatoes, tomato sauce, ketchup, water and stir. Cook on low for 1 hour, stirring occasionally, adding water if needed. At end simmer down (lid off) and reduce to your desired thickness.
