Kritharaki (Orzo with Vegetables)

 

 

A tasty and nutritious pasta dish.

Roasted Vegetables Ingredients

8 oz. orzo pasta
2 zucchini, cut in 1″ pieces
2 red bell peppers, chopped 1″
1 yellow bell pepper, chopped 1″
1 large yellow onion, chopped 1″
2 or 3 cloves of garlic, minced
1/4 c. olive oil
1 tsp. salt
1 tsp. black pepper

Sauce Ingredients

!/3 c. lemon juice
!/4 c. olive oil
15-20 basil leaves, cut in strips

Optional:

1/2 lb. crumbled feta cheese
1/3 c. pine nuts

Directions

Preheat oven to 400 degrees, or prepare outdoor grill. Combine the chopped vegetables and garlic with the olive oil, salt and black pepper in a bowl. pour evenly onto cookie sheet or into foil packs for the outdoor grill. Roast for 40 minutes in the oven, or until browned outdoors. Cook orzo about 10 minutes, slightly al dente. Drain pasta and combine with the vegetables. Pour sauce and combine. Add optional ingredients, stir and enjoy.
