Bougatsa (Filo Custard Pastry)



Sweet filo custard rolls.


4 cups milk
3/4 cup farina
1 cup granulated sugar
1/8 lb. (1/2 stick) butter
3 eggs, beaten
2 tsp. vanilla
3/4 lb. filo
butter for melting (1/2 lb.)
powdered sugar


On medium low heat, cook milk, farina, sugar and 1/2 stick butter, stirring constantly. As it thickens, add the eggs, cooking slowly until it thickens again. Add vanilla. Remove from heat.
Spread a sheet of filo on your work area, butter. Place another sheet on top, butter. Place about 1/8 of the mixture at the bottom. Roll sheets up as you would large tiropites; folding sides in. Repeat for about 8 roll-ups, placing in rows on cookie sheet. Bake at 350 degrees for approx. 1 hour, checking at 45 minutes. When cool, dust with powdered sugar and cinnamon.
